Duo de Tomates, Feta et Basilic
One of the newer trends we’re seeing in restaurants are the use of ‘verrines’ or glass containers to serve pretty salads, layered dishes and mousses. This easy salad made from red and green tomatoes takes ten minutes but looks like you’ve spent much longer preparing it.
For 10 people
4 red tomatoes
4 green tomatoes — the variety is green. Alternatively yellow tomatoes if true green ones are not available
100 g feta cheese
Olive oil, tarragon vinegar, salt and pepper
Small bunch basil
1 clobe garlic
Vinaigrette: Chop the garlic and basil. Combine with oil, vinegar salt and pepper to make a vinaigrette
Cup the tomatoes in small dice-shapes. Put the green tomato cubes on the bottom of the glass. Then add the red pieces. Pour half the vinaigrette on top.
Dice the feta into small cubes. Toss with the rest of the vinaigrette and sprinkle on top.
